2020 Colorado Chardonnay

Our Small Batch Series is a limited run of hand-selected wines, crafted to showcase the unique characteristics and flavors that come through thoughtful, low intervention winemaking.
This barrel-fermented Colorado Chardonnay leads with aromas of golden apple and marzipan. Aged sur lie, flavors of ripe pear emerge through a silky texture and a fresh minerality.
We harvested this Chardonnay at the Sauvage Spectrum Vineyard in mid-August 2020. The fruit was whole cluster pressed and the juice transported to our Fort Collins winery for our first in house fermentation. The juice was cold settled overnight then racked to neutral french oak barrels (6-8 years old). We pitched a neutral yeast and allowed the wine to ferment in barrels at room temperature, which developed some tropical esters. The wine completed malolactic fermentation in spring 2021, prior to bottling.
