Tasting Notes
All the flavorful details
Each harvest, our winemaker carefully plans, selects, and sources the highest quality grapes from the Grand Valley here in Colorado, Willamette Valley in Oregon and Columbia Valley in Washington before they make the trek to our winery. In addition to crushing, fermenting and packaging the majority of our wine on site at our winery in Fort Collins, we also collaborate with winemakers in Oregon to craft wines that are brought to our winery and aged further, blended, and canned, bottled or kegged in pursuit of our uniquely balanced flavors.

Crisp and fizzy, The OBC Wine Project Rosé features notes of strawberry, grapefruit zest and white cherry. As the bubbles subside, the wine opens up with ripe citrus and apple on the palate. A lively, lingering finish brings you back for another sip whether you’re at home or out in the sunshine. This food friendly wine is 100% Pinot Noir grown in the warmer region of Willamette Valley, Oregon.

2022 Blanc Natural
Our unfiltered Blanc Natural is rich and round, with a complex aroma of ripe stone fruit and orange zest. The 100% Pinot Gris sourced from our independent grower-partner Goschie Farms in the Willamette Valley underwent full malolactic fermentation with native yeast here at our Fort Collins winery. Extended lees contact in the barrel provides a smooth, round mouthfeel balanced by a pleasant acidity, with creamy flavors of apricot, creamsicle and peach. We racked the final press lot of our Oregon Pinot Gris to neutral french oak barrels and did…nothing! The wine fermented naturally with native yeast and completed malolactic.

2021 Dry Riesling – CAM’s Club Only
Bright, delicate, yet powered with acidity, The OBC Wine Project Dry Riesling stuns with notes of gardenia and lime. This medium bodied wine features flavors of lemon, honeydew melon and pineapple. Crafted at our Fort Collins winery with hand-picked Oregon grapes, the mouthwatering minerality encourages your next sip. This wine is available to CAM’s Club members only.

2021 Barrel Aged Pinot Gris
After sourcing whole-cluster Pinot Gris from Goschie’s family vineyards in Oregon, we crushed and blended this richly textured wine at our Fort Collins winery. Fermented and aged in neutral French oak barrels, aromas of spiced pear and lemon curd emerge from the glass supported by flavors of almond and butter cookie.

2022 Colorado Rosé
This zesty, fruity rosé shows the lighter side of Colorado Marquette, with intense aromas of raspberries and candied citrus. Unique and bold, with a bracing tartness reminiscent of pink lemonade, wtih flavors of raspberries, and strawberries and cream. Marquette grapes were whole cluster pressed here at our Fort Collins winery to minimize color extraction. Fermented cool with partial malolactic fermentation to tame the wine’s acidity.

2021 Pinot Gris – Skin Contact
Seeing red, but thinking white? We handpicked Oregon Pinot Gris, then treated like we would a red wine, leaving it on the skins for 21 days resulting in a brillant ruby hue. In the glass, it vibes like light-bodied, acid-driven red with flavors of cranberries and fruit punch. Chill like a white wine.

2021 CAM’s Club Cabernet Sauvignon
This lean and light Cabernet Sauvignon was hand-picked on small Washington vineyards and then crushed and fermented at our Fort Collins winery. Aged in neutral French oak barrels, red and dark fruit integrate with spice and playful tannins for a balanced and inviting wine.
When you join CAM’s Club – a new wine partnership between the CSU Alumni Association and The OBC Wine Project – not only do you get locally handcrafted wine that celebrates a deep connection to Fort Collins, you’ll receive limited edition, custom CSU wine like this Washing Cabernet in each Wine Club allocation.
